About Exploding Bakery

The Exploding Bakery was started by old school friends Tom & Oli, who were unsatisfied with their lot in life and decided that, when you have no money, the best way to get rich was to start a tiny bakery and cafe with a niche market for traybakes made with ground nut flours, butter and polenta.

Despite being gluten free and made without animal produce, this kind of cake still has attitude. A deep truffley texture and a real showcase for the Colombian chocolate used to make this cake so knock-out. Be warned this cake may bite back!
Lumberjack Cake
The most masculine of cakes. When not yielding an axe this guy is sweet natured from all the dates, but he retains some sharp whit from the apple. The coconut butterscotch topping gives a rustic, outdoorsy look, but gosh he's still handsome. Dense, dark & moist with apples, dates & a caramelised coconut topping. Think sticky toffee pudding with a bit of texture. Serve cold or hot as a pudding.
